Ganondorf is a beast (boar-like, the main difference being he has an orange mane, has horns and has foot paws instead of hooves)
He is the only Male Gerudo, as his race usually are all women. He lives alone in his fortress, protected by dark magic made monsters.
Ganondorf is considered dangerous by many people in the kingdom and has been doing suspicious stuff like sending monsters to Hyrule field, or spies to the Hyrule Castle... His personality is defined by unquenchable lust for power, extreme arrogance and a brilliant manipulative intellect. He's ruthless and calculating.
Ganondorf right now is researching the "sacred power", an ancient relic that can grant any wish if you get all of its pieces (usually 3, divided by power, wisdom and courage... Once in a while, the sacred power chooses a bearer for each one of its pieces... recently Ganondorf got the power one, and now he's searching for the 2 remaining) Despite his interest in the sacred power, he tries to maintain it as a secret until he can't keep it like that anymore, a proof of his high intelligence.
